Tumis Pare

Pahittt.....it's meaning bitter...


That's was always exist in my mind if I see peria.  Peria or Pare  is a tropical and subtropical vine of the family Cucurbitaceae, widely grown in Asia, Africa, and the Carribean for its edible fruit, which is extremely bitter. Its many varieties differ substantially in the shape and bitterness of the fruit (source : wikipedia.com).

 

But, it has many benefits for our body if we consumption as regularly , as a sample : for digestion problem, malaria, lever and many things.  And now we can see peria as a food.  We need more herb and effort to make a delicious food.
Firs, if you want to reduce a bitter taste from peria : after you cut (thin cut) , wash with water + salt and then press with your hands, do it for 3 times.

Here te recipe :
500 grams peria (which a press process)
8  mix chilli (green and red chilli)
5 tbs shallot, chop
3 tbs garlic, chop
100 grams tempeh, cut square
2 tbs vegetable oil
80 ml water
Salt and sugar for taste

How do :
Saute with vegetable oil shallot, garlic, tempeh and chilli until browning and pour the water. Cook until hot and fill peria, salt and sugar. Cook again until peria soft.
